Easy Peasy Breakfast Casserole

I love being involved with Davyn’s school. It’s something I always knew I wanted to when I became a mom. Of course how involved I perceived I would be versus how involved I am are 2 completely different things. 😉 But I do try to help as much as I can. At the beginning of the school year, I filled out the PTO survey and tried to set realistic expectations for myself this year. I really did try.  One month into school and Grandparents’ Day was Sunday! Our PTO sponsored a grandparents’ breakfast before the Wednesday chapel service this week and guess who volunteered to make a breakfast casserole! This momma!

Below I’m going to share a recipe with you for a breakfast casserole that can be cooked in the oven or in a crockpot. It is perfect  if you want to wake up to a delicious cooked breakfast. This is perfect for a lazy Saturday morning or if you’re like us and have your family over for Christmas morning breakfast. You can spend more time enjoying your family and less time standing over a stove or oven! Enjoy!


Easy Peasy Breakfast Casserole

  • Prep Time: 8h 15m
  • Cook Time: 1h
  • Total Time: 9h 15m


  • 1 lb ground sausage
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 6 eggs, beaten
  • 2 c milk
  • 6 slices white bread, cut into cubes
  • 8 oz Cheddar cheese, shredded


  1. Brown ground sausage in skillet until just cooked through.
  2. In separate bowl, whisk together eggs, milk, salt, and pepper.
  3. Cut bread into cubes.
  4. Add the cubed bread, sausage, and cheese to the egg mixture
  5. Pour into 9x13 pan, cover, and refrigerate overnight.
  6. In the morning, turn oven to 375* and bake covered approximately 50 minutes. If it looks like it still needs to cook a little longer, uncover and cook for an additional 10 minutes.
  7. For crock pot – cook on low for 7-8 hours
