Crock Pot Vegetable Beef Soup

It’s starting to get cold here in SC and I am looking forward to all of the hearty soups that come with cold weather. I had leftover stewed tomatoes and decided this was the perfect time to throw together a big batch of crock pot vegetable beef soup. Yummy!

This vegetable beef soup is perfect for the cold days and nights of winter. You can enjoy this hearty soup by itself or serve it over rice.  It is perfect for those who want to come home to a warm pot of soup ready to be enjoyed on those cold nights.

Crock Pot Vegetable Beef Soup

Ingredients

  • 1 lb beef stew meat
  • 6 c stewed tomatoes
  • 1/2 lb frozen butter beans
  • 1 lb frozen corn
  • 1/2 lb frozen okra

Instructions

  1. Place beef in skillet, salt and pepper to taste, cook until sides are evenly browned.
  2. Place beef in crockpot.
  3. Add frozen corn and butter beans and season to taste.
  4. Pour tomatoes over the meat and vegetables.
  5. Add frozen okra to the top. Do not stir at this point.
  6. Cook on High for 5-6 hours.
  7. You can serve this by itself or over rice.
